Claytonia - Miner's Lettuce - Winter Purslane

ClaytoniaClaytonia makes its debut on the farm this spring.  A slightly succulent, hardy salad green, Claytonia was eagerly sought out by California Gold Rush miners in the mountains because of its high Vitamin C content.  We sought it out because of its winter hardiness and delicious taste.  Mildly flavored Claytonia is an excellent addition to a spring salad.  Young Farmer C (the pickiest of the bunch) rated it a 9 on a scale of 1 to 10 and promptly sat down to munch on a pile of leaves.  However, being nutritious and delicious is not the only thing Claytonia has going for it.  This beautiful plant adds fresh texture and color to the salad bowl with heart-shaped leaves that cup a delicate white flower.  Only available during cool weather, give Claytonia a try today.
